How much current can the outputs of the AIO module generate?
With a load of max. 450 Ohm, 24mA can still be driven at the current outputs.
How can we best implement the cabling for a type K thermocouple on the AIO or do we need an additional evaluation unit or something else for this?
The AIO cannot be operated with type K sensors, but only with PT100/PT1000, as you have already mentioned. If you want to use these, you need external transducers to 0-10V / 0-24 mA.

Use the measuring range 0-24 mA.
Why does the AIO IN LED sometimes flash even though I have not changed anything?
Try to pull unused analog inputs to GND using a wire jumper. Alternatively, configure the maximum measuring range for this +- 10V.
